Loaded Chicken & Potato Casserole

You ever feel like you make the same thing over and over again? I feel like with chicken I either make a baked fried chicken or add some sort of sauce to it and serve it with my go to rice.

I don’t often do a whole lot with potatoes. I don’t like mashing them but I will slice them and fry them or dice them up and . That’s pretty much it.

I also like simple one pot, easy clean up meals (even though I put everything in my dishwasher). When I found this recipe on Pinterest I was so excited that I found something easy and something that my kids would love to eat as well.

What You’ll Need:

4 slices Bacon (the original recipe said 1lb but for the dish size that is WAY too much)

1lb Boneless Chicken Breasts

2 tbsp Garlic Powder

1/2 cup Green Onion (I didn’t have any so this was something I omitted)

6 Red Potatoes (I used yellow as that’s what we usually have on hand)

2 tbsp Hot Sauce (I used 1 tbsp since my kids would be eating this and I used Franks Red Hot Buffalo Sauce)

1/2 tsp Black Pepper

1 tbsp Paprika

1 tsp Salt

1/3 cup Olive Oil

2 cups Mexican Blend Cheese (I went with Marble as it doesn’t contain anything else “spicy”)


Sour Cream or Ranch


I diced up my chicken and potatoes tossed put it in my backing dish and tossed with olive oil. Next I added all the spices – garlic powder, hot sauce, pepper, paprika, salt and mixed with all up with the chicken and potatoes. I topped it with the cheese and baked it then at 375F for 55-60 minutes. While that was cooking I fried up the bacon, crumbled it and waited for the casserole to be done before adding it to the top.

For the kids I served it with sour cream on top and for myself I used Ranch! Seriously so good either way! Everyone’s plates were empty!

Easy Sheperd’s Pie

I needed something quick and easy for me to whip up before I head to work so that my husband can just pop it in the oven. Plus, like always, it needs to be something I know my kids will eat. They like meat and they like potatoes so this recipe was a no brainer!

I’ve been trying out the 125 Best Ground Meat recipe book still and I came across this one for Sheperd’s Pie. I just changed up a few things that we personally like but it was a quick and easy way to make this dish.

What You Need:

1 tsp Vegetable Oil

1 Small Onion

2 Cloves of Garlic (I used the pre-minced jar so I did about a tbsp of that)

1/4 Green Bell Pepper (this I omitted as I can not stand green peppers while pregnant)

1lb Ground Beef

Black Pepper to taste

1 cup frozen mixed vegetables (we prefer the carrots, corn and green bean mix)

1 1/2 cups Boiling Water (I used the amount of water that the SuperBurger package said)

1 pouch Beef Noodle Soup Mix (I used the SuperBurger mix from Club House – I find it has more flavour)

1 box or bag Instant Mashed Potatoes

Paprika for Garnish (I used smoked paprika)


I browned the ground beef with the garlic, onion and the dash of pepper. I added the SuperBurger packet and water to the  beef mixture and stirred. When that was mixed well I added the frozen veggies and simmered.

While the meat and veg were cooking away I made the instant mashed potatoes. I did the microwave directions on the package as it would be done quicker and I was making this meal before I headed to work at 4pm.

Once the meat was done, I added it to the casserole dish, fluffed up the potatoes (I even added some cheese to the potatoes for something extra) and topped the meat with the potatoes.

I sprinkled paprika on top (we had some smoked paprika so I used that).

Smoked paprika gave it some extra flavour. Definitely will be adding smoked paprika from now on.

I set it in the fridge for my husband to put in the oven at 375F for 15-20 minutes once he got home from work.

I got a text from my husband saying “The kids loved the sheperds pie!” – so this recipe is definitely going into my collection!


Taco Salad Casserole

This was a fun take on tacos! I find taco night can be super messy with shells broken all over and drops of toppings all over clothes. A casserole was just easy and less mess! They can still pick and choose what they want to top their “taco” and be involved with making their dinner but use a fork to eat it.

I first found the recipe in 125 Best Ground Meat Recipes book at the library and a similar recipe on Pinterest called Dorito Taco Casserole.

Here’s what I used to make this recipe:

1lb Ground Beef or Turkey (we had ground beef on hand today)

1 cup of Onion

1 cup Frozen Corn

1 packet of Taco Seasoning

1/2 cup Water

1/4 cup Sour Cream

1 cup Salsa

1/2 bag of Doritos (whatever flavour you fancy) or Tostitos

1 1/2 cup of Cheese (I used marble but you can use a Mexican Blend)



Diced Tomatoes

Olives (we prefer green)

More Cheese

More Sour Cream

More Salsa

Hot Sauce

…. Really whatever else you like!

I browned the ground beef in a skillet and pulled out my casserole dish. I used the cooking oil to grease my casserole dish and added crushed chips to the bottom. Once the meat was browned, I added the onion and corn. When the onions were soft I added the taco seasoning and water and mixed well. Lastly, I added the salsa and sour cream to the meat, mixed and was ready to start layering.

I took the meat, added it to my crushed chips and topped with cheese. I repeated this once more and popped it in the oven at 350F till the cheese melted (about 10-15 minutes depending on how hot your oven runs).

All our toppings ready to go – hot sauce, tomatoes, lettice, sour cream, green olives (my fav and what I’ve been craving) and salsa. You could also add more crunched chips too!

When finished, I dished it out and everyone added what they wanted and my kids approved! This is the biggest thing for me, making something “new” and them not eating it – the worst offender is my 1 year old. He will turn his nose up to even his most favourite meal if not done the “correct” way!
